Sweet Fruit & Whipped Cream


It was a long day today.  I was craving something sweet, but I wanted something quick and easy to make.  Behold! Beautifully ripened organic strawberries and organic blueberries just waiting to be devoured! Taste the sweetness...


Sweet Fruit & Whipped Cream

Ingredients:

16 oz container fresh organic Strawberries, washed, stem removed, and sliced
6 oz container fresh organic Blueberries, washed
1/3 cup raw unfiltered Honey (add more to your taste)
Saigon Cinnamon, dash
2 cups organic Heavy Cream
2 Tablespoons White Sugar (add more to your taste)

Directions:

Place fruit in a large mixing bowl.  Add honey and stir to combine.  Add dash of cinnamon and stir.  In a separate bowl, beat heavy cream and sugar with electric beaters to desired consistency.  Place fruit mixture in a dish to eat and top with whipped cream and dash of cinnamon.

Roasted Marsala Lemon Chicken & Vegetables


You will love the smells wafting through your kitchen when you make this.  Just imagine the aromas of sweet Marsala, lemon, chicken, and roasted vegetables which sweeten when roasted.  Yum.  And super simple to make!


Basically, you put your ingredients in a large roasting pan and top it with a sweet Marsala lemon sauce.  My mouth is salivating as I type this.  You can make so many variations of this recipe depending on which vegetables you have on hand.


I made an Organic Wild Rice Mix with this to help sop up the delicious juices and flavor.  But you could make mashed potatoes, polenta, or whatever you like! This is a great recipe to make when guests come over too!

Roasted Marsala Lemon Chicken & Vegetables

Ingredients:

Extra Virgin Olive Oil (in Spray form to coat roasting pan)
Organic Chicken with Bone-In & Skin-On (I used 2 breasts & 4 legs)
2 Large Organic Carrots, Peeled & Chopped into large pieces (about 2 inches or greater)
2 Organic Onions, Peeled & Chopped into large wedges
1 Organic Garlic Clove, minced
15 Organic Cherry Tomatoes, halved
10 oz Organic Sliced White Mushrooms
Salt (I prefer Himalayan Pink Salt), Pepper, Garlic Powder

Sauce:

2 Tablespoons Organic Butter, melted
Juice of 2 small Organic Lemons/1 large Organic Lemon
1 1/2 cups Sweet Marsala (I use Incanto)
1 cup Organic Chicken Stock
Slurry (made with 2 Tablespoons Gluten Free Cornstarch & 4 Tablespoons Chicken Stock in separate bowl mixed well)
Fresh Organic Parsley, minced for garnish (about 1/4 cup)

Directions:

Preheat oven to 400 degrees.  Get your big roasting pan and coat with Olive Oil Spray.  Place Chicken in roasting pan.  Add Carrots, Onions, Garlic, Cherry Tomatoes, & Mushrooms.  Season generously with Salt, Pepper, & Garlic Powder.  Set aside roasting pan.  Melt butter.  In a separate bowl, combine butter, Lemon juice, sweet Marsala, & Chicken Stock.  In a separate smaller bowl, make a slurry which will thicken the sauce during cooking by mixing Cornstarch with Chicken Stock.  Mix the Sauce & Slurry together.  Pour the Sauce over the roasting pan ingredients.  Cook at 400 degrees for one hour. Make sure the chicken registers 180 degrees after cooking one hour before eating.  Garnish with fresh Parsley and enjoy!

Quinoa Spinach Salad

Quinoa Spinach Salad













We had some out of town family over during the holidays and I wanted to create a healthy and flavorful meal without too much work.  I threw together this uber healthy salad to accompany the meal and received rave reviews.  It is healthy and delicious and easy-a winning combination! It makes for a really good lunch too!

Quinoa Spinach Salad

2 cups fresh Organic Spinach, washed and dried
1 cup fresh Organic Cherry Tomatoes, halved
1/2 cup Feta Cheese
1/2 cup Olives
1 cup warm cooked Organic Quinoa (cook according to package
directions)

Homemade Salad Dressing

3 tablespoons Extra Virgin Olive Oil
1/3 cup Apple Cider Vinegar
1 tablespoon organic Dijon Mustard
Salt & Pepper to taste

Directions

Cook Quinoa according to package directions.  While quinoa is cooking, mix Salad Dressing ingredients in a cup or shake in a lidded mason jar and set aside.  In a separate bowl, add Spinach, Tomatoes, Feta, and Olives.  Add warm Quinoa to salad and mix to slightly wilt the Spinach.  Top with Salad Dressing and mix. Eat & Enjoy!

Add extra Salad Dressing and Salt & Pepper to taste if you like.
